Recipe: Vibrant Southwest Salad

This vibrant salad blends fresh vegetables, protein, and zesty seasonings into a dish that’s as colorful as it is nourishing. It’s packed with fiber, antioxidants, and heart-healthy fats—making it a great option for both taste and wellness.

Ingredients (4 servings)

  • 1 head romaine lettuce (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cup canned black beans (rinsed and drained)
  • 1 cup corn kernels (fresh, frozen, or roasted)
  • 1 red bell pepper (diced)
  • ½ red onion (thinly sliced)
  • 1 avocado (sliced)
  • ½ cup cotija cheese (or feta, crumbled)
  • ¼ cup fresh cilantro (chopped)
  • Optional protein: grilled chicken, shrimp, or steak

Dressing

  • 3 tbsp olive oil
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp apple cider vinegar
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. In a large bowl, combine the lettuce, tomatoes, beans, corn, bell pepper, and onion.
  2. In a small jar or whisking bowl, mix together olive oil, lime juice, vinegar, cumin, chili powder, garlic powder, salt, and pepper until smooth.
  3. Drizzle the dressing over the salad and toss gently.
  4. Top with avocado slices, cotija cheese, and cilantro.
  5. Serve immediately with optional grilled protein for a complete meal.
